Today I'd like to recommend: scrambled eggs and ham! They always cheer me up whenever I wake up feeling sad.
First dice some ham. It doesn't need to be too thin, just small enough for it to get mixed with the eggs. Usually one strip is fine if it's for a single person. I personally prefer turkey ham, as I've never been a big fan of pork meat in general.
Then, put a pan in the fire and add a bit of butter, just enough to cover the bottom of the pan. Add the ham, and let it sit for a few seconds before cracking a few eggs in. I remember it was my grandma who taught me how to make eggs. My father's mom. She made them for me every morning and they always tasted so good.
Add some salt and start scrambling. You wanna start with just the whites, leaving the yellows whole until later. I'd like to say my grandma took care of me for the first few years of my life, but looking back I think it was I who was taking care of her.
Pop the yellows one by one, and help them mix with the uncooked whites. Ideally, you want to get the pan out when there's only a bit of uncooked white in there, as we want the eggs to still be runny and almost liquid-like. I wonder how my grandma is doing. I personally don't think I have the strength to go see her.
Finally, serve them with some freshly brewed coffee or some orange juice, as well as the bread. I'm personally not a big fan of the loaf-style bread that seems so popular in America. I prefer my eggs on some Hallulla bread, or some freshly cooked Marraqueta bread. I wonder what the people in the bakery I used to visit think. If they ever wondered why the little kid who would always take some pie with the bread just disappeared one day, along with the sweet old lady that always came with the kid. Do they ever think about long gone regulars? Would they recognize me if I came back tomorrow?
I usually make these with around 3 eggs. I eat a lot.
